Inspired by the famous Indian Kathi Roll, this sandwich is simply symphony for your tastebuds!

Juicy Tandoori Chicken, Green Chutney, lightly pickled onions, egg omelette..this is yuuuum!

I tried Kathi Roll the first time in November while I was on vacation in India and I was suprised of how good it can be. I chose to substitute the Paratha (Indian Flatbread, which is used in Kathi Roll) with simple toast bread to make the recipe more accesible and easier, as I know not everybody has time for Paratha.

This is really a great natural source of protein as it contains chicken and egg both. If you use whole wheat bread, then it's even better.

Instructions

  1. Making the chutney

    For the chutney, put all the ingredients in a blender and mix until you have a nice paste. Adjust the taste with more salt if needed. Set aside.

  2. Making the sandwich

    Start by beating the eggs with some salt, then add half of the beaten egg in the pan and immediately add the bread so that it will stick. Cook with lid on until ready or on both sides. Do the same for the other slice of bread. 

    Add the chutney on the omelette, then add the cubed chicken, the onion, then add the other slice and dig in! Enjoy with extra chutney. This sandwich is irresistible.
