Christmas Pancakes with Cinnamon Butter

I don't think there is anybody in this world who would not love pancakes. I have to admit that the kind of pancakes that I eat weekly contain no sugar or butter and most of the time I add oats instead of flour. But sometimes I like to enjoy one decadent portion of American pancakes and this Christmassy combination found in one old BBC Good Food magazine was absolutely amazing.
These pancakes are rich, fluffy and have a Christmassy vibe due to the apples, cranberries, cinnamon and orange zest that I have added into the batter. They do not contain sugar at all, that means you can pour as much syrup as you want🤭 Oh, not mentioning the cinnamon butter.

Making the cinnamon butter
Start by making the cinnamon butter. Mix the softened butter with the cinnamon and wrap it in plastic foil, forming a small roll. Refrigerate for at least 30 minutes. Meanwhile, prepare the batter.

Preparing the pancakes batter
Mix the flour, bicarbonate of soda and a little bit of salt in a bowl. Make a well in the center and add the buttermilk, eggs, milk and melted butter. Mix everything well until it forms a batter. Stir in the grated apples and strained cranberries and incorporate them into the batter.

Cooking the pancakes
Heat 1 tsp of oil in a pan and cook the pancakes one by one (or two by two if you want them smaller), flipping them on the other side once bubbles start appearing and serve them with maple syrup and the cinnamon butter. Enjoy!
