I've been dreaming of photographing brownies for a while now. I tried different postures, nothing worked. Until I got pretty content with this shot, but this is not important. Important is that this was one of the best brownie recipe I've ever tried (from my favourite book The Great British Bake Off recipes). I mean, the name says it all, right? Triple chocolate, just imagine! Unfortunately, I baked mine a little to much because this is what happens when you multitask, but if you cook it for a shorter period of time, you can get a very gooey texture. Or if you like a more cakey texture, you just have to keep it for longer in the oven (it should not take more than 30 minutes)

Ingredients (for a 20cm x 20 cm rectangular tray)

Instructions

  1. Melting the chocolate

    Start by melting the butter and chocolate over bain-marie (bring some water to a boil and put the bowl containing butter and chocolate on top). Leave to melt until completely melted. Set aside and cool slightly.

  2. Beating the eggs

    In a stand mixer, add the eggs and the sugar and beat over high speed until doubled in size and frothy. Gradually add the chocolate and butter mixture and keep beating over lower speed until incorporated.

  3. Incorporating the flour

    Incorporate the flour and the salt into the mixer using a big wooden or metal spoon. We want to keep the air bubbles so at this stage we won't use the mixer anymore. Add the chocolate chunks and incorporate them too. Line the baking tray with baking sheet, pour the batter in it and distribute it evenly. Bake in the preheated oven at 180 degrees Celsius for 25 minutes if you like it gooey or 30 minutes for a more cakey texture. Enjoy!
