Description

These Greek zucchini fritters are a must try this summer! They are packed with flavour, so nutritious and sooo damn good! Growing up in Romania I used to have this as well very often in my childhood, we call it "chifteluțe de dovlecei".

  1. Prepare the zucchini

    As usual, it helps if you watch the video here. Grate the zucchini and add the salt. Let it sit for 10 minutes. After 10 minutes, drain the zucchini and squeeze as much water as possible. This is important because if the zucchini is too moist it will impact our dough. Use a cloth for best results in order to drain the zucchini. 

  1. Mix everything together

    To the drained zucchini add the chopped herbs, the chopped garlic, the eggs, the feta cheese and flour. Mix everything very well until everything is incorporated. 

    In a pan, heat 3 tbsp of olive oil. With a spoon drop dollops of the zucchini batter and fry 3-4 minutes on each side on medium heat. Take them out on paper towel so that they will absorb the extra oil and serve with tzatziki. Enjoy!
