Easy and Healthy Harvest Chicken Salad
Description
This Harvest Chicken Salad is perfect for the cold season. It is high in protein, rich in fiber & perfect for meal prep. I used to order this for 16€ on delivery apps 😅 but making it at home is cheaper & more nutritious.

Instructions
Prepare the chicken
Mix all the ingredients for the chicken marinade, add it to the chicken and marinate for 1h at leats or overnight. Once marinated, cook it in the pan or air fryer or bake it (as per your preference, I cooked it in the airfryer for 12 minutes).
Assembly
For the potato, you can again choose any cooking method you'd like. I baked them too in the airfyer, I marinated them with salt, garlic powder and a bit of olive oil and baked for 20 minutes (sweet potato bakes faster than normal potato so be careful not to burn it!). Dice the apple and mix with lemon. Prepare your dressing by mixing all the ingredients for the dressing in a small jar (shake it, shake it!). Now we are ready for assembly: add spinach, cabbage, sweet potato, cubed apple, feta, sunflower seeds & sliced chicken in a bowl. Drizzle the honey and mustard dressing & enjoy!
