Puta – Buckwheat Noodles
Description
Puta is a famous dish in Bhutan containing fresh homemade buckwheat noodles. Actually this dish is more typical for the city Bumthang, a very cold district (did you know that buckwheat grows even in very cold climates? This is how the abundant usage of buckwheat in Bhutan could be explained) located in the center of Bhutan, a place with an amazing valley where buckwheat grows plentifully.
The buckwheat noodles are handmade and then spiced with chili and served with egg and scallions. Puta is also served as a food offering to gods (tshok) and to the priest.
I have adapted the authentic dish to a more affordable one by using Japanese soba noodles which contain buckwheat, because making the noodles from scratch might be a hassle. Still, I got an amazing result and the dish turned out to be extremely delicious.

Start by boiling the buckwheat noodles in boiling water together with some salt. Boil them as per the package instructions - mine were supposed to be boiled for 6-7 minutes.

In a pan, heat 1 tbsp oil and Sautee the spring onion for 2 minutes, then add the chilli and Sautee it for 1 minute.

Set the onion and chilli to one side of the pan and in the other add the beaten egg. Scramble it until almost cooked and then mix it with the chilli and spring onions.

Add the rinsed noodles, mix everything well and add the soy sauce. Give it a mix and serve while still hot, otherwise the noodles will become a little bit soggy while they cool down.

Serve with extra spring onion.
