Descriere

Briouates are sweet or savoury pastries indigenous to Moroccan cuisine.

Originally they are made with warqa, a very thin dough similar to filo pastry sheets and they are usually fried, but because I like to simplify all the international recipes and to make them accesible to everybody, I adapted it to my own taste and I have prepared them using very basic ingredients. Besides that, I chose to bake them to cut down the calories. Don't worry, they are still delicious and even very flaky!

Briouates have 2 shapes: either cylindrical or triangular. You can choose any shape you want, what's important is the way you fold them. For that, I invite you to check the recipe on my youtube channel.

  1. Making the filling

    Start by adding all the ingredients for the filling to a bowl. Mix them well until everything is well incorporated. Set aside.

  2. Preparing the filo sheets

    Separate the sheets 4 by 4. Keep 4 aside and place them carefully so that they won't break. The other 4 can be placed on the working surface in an even layer (it has to look like a square). Portion the square in 3 long stripes (mine were 10 cm each but you don't have to be so exact, just eyeball them). After you portion them with the knife, separate them and brush them with the melted butter. Add 1 tablespoon of filling at the end of each stripe. Fold the sheet while rolling it to the left and to the right so that you will get a triangle (the video is much more explanatory than I am, so please check that). Sea the ends with melted butter and do the same with the remaining briouates.

  3. Baking the briouats

    Place the briouates on a tray lined with baking sheet and  brush them with melted butter one more time. Bake in the preheated oven at 180 degrees Celsius for 30 minutes or until they are golden brown. Enjoy with tea!
