Easy Korean Sushi (Gimbap or Kimbap)

Korean sushi, also known as Kimbap, has become one of my favourites! I was never fond of Japanese sushi because of the raw fish and the sweet rice (don't hate me ok😆). This alternative is much more nutritious as it has more veggies and protein too! You definitely need to try it!

Boiling the rice
Please start by watching the reel here as it already contains some of the instructions. Boil the sushi rice according to the instructions on the package. I usually wash the rice 4-5 times very well, then add double the amount of water to it (for example 2 cups water to 1 cup of rice, I usually add a bit extra water because I like the rice softer). I let it boil and then turn down the stove and let it simmer covered with a lid until the water is evaporated. Turn off the heat once completely cooked and let it rest with lid on for 5-10 minutes. Remove the lid, let it cool down a bit, then add 1 tsp of sesame oil and 1 tsp of sesame seeds.

Cooking the carrot
Add 1 tsp of sesame oil to a pan and sautee the carrot until soft but still a bit crunchy. Season with salt and set aside.

Cooking the spinach
Boil the spinach for 10 seconds then give it an ice bath to preserve the green colour. Let it drain well and then season with 1 tsp of sesame oil and the finely chopped garlic clove, salt and pepper.

Cooking the omelette
In a pan add 1 tsp of sesame oil and whisk the eggs with some salt and pepper. Add them to the pan and cook on both sides until done. Cut into long stripes and set aside.

The steak
Mix the beef with all the ingredients mentioned in the marinade section. Let it marinate for at least 30 minutes. Optionally you can add 1 tsp brown sugar but I wanted to keep it sugar free. In the same pan you cooked the omelette and carrots, cook the steak as per your wishes - all the way through or just enough to stay tender.

Radish pickle (Danmuji)
I must say I am not very knowledgeable when it comes to Korean pickle so I followed this recipe step by step and I used German white radish called Rettich which is available in all stores in Germany. It was perfect and so much healthier than the Danmuji found in Korean stores which often has too many preservatives and chemicals.

Asamblare
Take a seaweed sheet, add the rice and press it tight so that it will stick, add few omelette stripes, add the carrots, spinach and the steak stripes. Repeat the steps for the next 2 nori sheets. Serve with soy sauce. Enjoy!
