The Afghani Sheer Pira
Description
This traditional Afghan dessert is perfect for the ones with a sweet tooth, because it’s so sweet yet so flavorful!
“Sheer Pira” means “sweet milk” in Dari (the language spoken in Afghanistan) and this is exactly what this dessert is: a sweet milk fudge flavored with rose water, cardamom and pistachios.

Start by boiling the sugar syrup. In a pan, add the sugar and the water and boil for 10-15 minutes, until the syrup starts leaving a trail while rubbing it with your fingers (see video).If you over boil the syrup, the Sheer Pira will be very hard and you will not be able to eat it.

Pour the hot syrup into a bowl and start adding milk powder to it (gradually) and mix everything with a whisker to avoid lumps. Add powdered milk until you are not able to mix the batter with the whisker anymore - that’s a sign that you should stop. Add the remaining ingredients - cardamom, rose water and walnuts and mix well.

Transfer the Sheer Pira to a small tray lined with baking sheet and oil and gently press it down with your wet hands. Add the powdered pistachio and chopped pistachio and let it set for at least 20 min.
