Thai Mango Sticky Rice

I loooove mango and I loooove rice! And the fact that you can create such an amazing dessert with these 2 key ingredients is simply mind-blowing!
The first time I tasted this dessert I simply fell in love. Sticky sweet rice with a subtle coconut flavor, topped with sweet mango...simply yum!

Start by straining the rice and distribute it evenly on a baking sheet which you will have to place in a bamboo steamer. Steam the rice for 20-30 minutes. The rice should be transparent and soft once it’s completely cooked and, of course, very sticky.

In a separate pan, mix the coconut milk and the sugar and simmer until the sugar is melted. Do not boil!

Mix the rice with the warm coconut milk and sugar mixture and let it sit for a couple of minutes (10 minutes should be enough). The rice will absorb the milk and it will become thick and creamy.

After 10 minutes, serve the rice with cubed mango, coconut cream and sesame seeds. Enjoy!
