  • If you don't know one, I'll name one: Thai curry! This is my absolute favorite Thai dish and I would never get enough of it. Based on 5 key ingredients, it provides so much flavor and pleasure with every single bite!
  • What do you need for a perfect Thai curry?

  • Thai curry paste - find it in Asian stores or why not, do it on your own!
    The main ingredients which make a Thai curry paste are: lemongrass, shallots, cumin seeds, black peppercorns, coriander seeds, galangal and shrimp paste. There are 3 types of Thai curry pastes: yellow (less spicy - it has turmeric), green (spicy - contains green chilli) and red (spicy - contains red chilli).

  • Good quality coconut milk

  • Chicken, beef, even vegetables if you are vegetarian. There is also Thai curry paste without shrimp paste, just check the ingredients on the label.

  • Good quality fish sauce - it gives that umami taste. Remove if vegetarian.

  • Kaffir lime leaves - they give such a fresh and zingy tone to the dish. I love them!
    Serve with lime juice.

  1. Start by heating some coconut oil in a pan and add the paste. Fry it for 1 minute until it starts releasing its flavours. Add the chicken to it, coat it well with the paste and cook for 5-10 minutes.

  2. After 5-10 minutes add the coconut milk and simmer everything for 5 minutes. Add the kaffir lime leaves and the fish sauce. Boil for 2 more minutes and serve hot with jasmine rice.
