This Romanian Cherry Sponge Cake is so basic and so easy! This recipe takes me straight back to my childhood. And the best part? You can make it with any fruit you love! So if you are craving something sweet and easy, you should try! It is really evergreen, you can make it any time of the year with any frozen fruit, just defrost them first and drain them well and additionally mix them with a bit of flour before adding them to the cake.   1. Beat the eggs

    Beat egg whites with the sugar until stiff. To make sure it is stiff enough, place the bowl upside down and if the meringue is not falling, you're good. Separately, in a bowl, mix egg yolks, oil & vanilla, then fold gently into the whites. 

  1. Fold everything

    Sift flour in 2 batches, folding to keep the batter airy. Sifting the flour helps with preserving the air in the batter. Use a metal big spoons for folding if you have and fold the flour in circular movement (from downwards upwards).
    Pour into tray, top with cherries and bake until golden.

  1. Final touch

    Dust with icing sugar (optional) and enjoy with a cup of tea or coffee.
