Description

This Flammkuchen with Figs and Goat Cheese (Flammkuchen mit Feigen und Ziegenkäse) is basically a German-French flatbread that’s like pizza, but lighter and crispier. It is perfect for the cold season and even a perfect appetizer for Christmas.

Today I’m giving it a seasonal twist with figs, goat cheese, pecans and rosemary.

Instructions

  1. Prepare the dough

Mix all the dough ingredients into a soft dough. Cover and rest 30 minutes (important: gluten needs to develop so you can stretch it thin). After 30 minutes, roll the dough out very thin and place on a baking tray.

  1. Finshing the Flammkuchen

Spread crème fraîche onto the rolled dough, add the figs, goat cheese, rosemary, and pepper. Bake at 250°C for ~10 min. Sprinkle chopped nuts on top before serving and enjoy! Optional: you can add a drzzle of honey.
