Banh Mi - Vietnamese French baguette

Banh Mi (meaning bread in Vietnamese) is most probably one of the most famous sandwiches from all around the world and a staple in Vietnamese cuisine and in street food in general.

This Vietnamese sandwich with French influence consists of a French baguette 🥖 (which was introduced to Vietnam in the 19th century, when it was still a part of French Indochina), pickled veggies like carrot and daikon radish, cucumber, meat, mayo, chilli and coriander.

My version of today is completely vegan - I have substituted the meat with marinated tofu and it was incredibly good! Trust me when I say I don’t really like tofu, but in this combination, using the right ingredients, it’s perfect❤️

Instructions

  1. Mix the hoisin sauce, soy sauce, water and crushed/finely chopped garlic in a bowl. Add the sliced tofu to it and marinate for at least 30 minutes. I left it overnight. After 30 min, remove it from the marinade and fry it in a hot pan on each side until caramelised. Set aside.

  2. Mix water, rice wine vinegar and sugar and add to the veggies. Let it sit for 10 minutes. Drain and set aside.
  3. Slice the baguette  and spread 1 tsp vegan mayo on it. Add the caramelized tofu and then add the pickled veggies. Add some cucumber slices, some coriander and some sliced chilli.  Enjoy

    You can substitute the tofu with meat for a non-veg version.
