Chicken Satay is such an easy dish to prepare and it is so delicious that you just cannot say “no” to it!

Juicy chicken bites, marinated in sweet soy sauce, garlic, shallots, spices, served with a creamy sweet peanut butter dipping sauce!

Ingredients
    For the chicken marinade
  • 500 g chicken breast/thighs cut in cubes (your choice, thighs will be juicier but fattier and breast will be lighter but not that juicy)
  • 1 tsp Chopped Garlic
  • 1 tsp Chilli
  • 1 tbsp ground coriander
  • 1 pinch nutmeg
  • 1 tsp cumin
  • 1 tsp oil
  • 0.5 shallot (finely chopped)
  • 3 tbsp kecap manis (Indonesian sweet soy sauce)
  • a squeeze of lime
  • For the dipping sauce/peanut sauce
  • 100 g peanut butter
  • 1 clove garlic
  • 0.5 shallot (finely chopped)
  • 0.5 tsp ground cumin
  • 1 tsp coriander powder
  • 0.5 tsp chili powder (add 1 teaspoon if you like it spicier)
  • 100 ml water
Instructions
  1. Start by marinating the chicken. Add all the ingredients to the chicken and rub it well with the marinade and marinate it for about 30 minutes.

  2. Meanwhile, prepare the sauce. Add the shallots, garlic and spices to the peanut butter and add a little bit of water. Pour water gradually while mixing the sauce and until you get the desired consistency (it should be creamy).

  3. Preheat the oven to 200 degrees. Take 5 grill skewers and add each piece of meat on them. You will need 5 skewers in total. You can either bake them or grill them if you want to do it the traditional way. Grill/bake until ready.

  4. Serve with the sauce and steamed rice. Enjoy!
