As you might have already noticed, I am a big fan of blood oranges. I already ate enough of them so far and I was thinking of yummy combinations in savoury dishes, as I have already posted a dessert with them.

Why not enjoying blood oranges in a winter salad, together with some beetroot, walnuts and crumbled goat's cheese? This was absolutely delicious and so fresh, I love the combination between sweet and sour.

Would you try this combination?

Ingredients
  • 125 g mixed leaf salad
  • 2 Pcs blood orange
  • 50 g goat cheese
  • 50 g walnuts
  • 2 Pcs boiled beetroot
  • dressing of your choice (I have used the classic olive oil, a little bit of vinegar, salt and pepper)
Instructions
  1. Basically mix everything together

    On a big platter, place the mix of salad. Peel the oranges, cut them into thick slices and add them onto the lettuce leaves. Cut the beetroot into thin discs and place them onto the salad. Add the chopped walnuts (or whole) and crumble the goat cheese on top. Drizzle the dressing of your choice over the salad. Serve and enjoy!
