I used to have this cottage cheese chocolate bars quite often as a teenager and I was craving them recently, so I decided to make them home. These bars are actually of Russian origin and they are called "Syrok", they are available at Kaufland in Germany, but you can imagine how the label looks like (full of chemicals). They are really easy to make and they last in the fridge for a couple of days. Now, can we make this recipe viral please? I am obsessed with these bars, so good😆

Ingredients
  • 250 g cottage cheese (the grainy one, not the big pearly one, you find it Russian/Balkan stores)
  • 30 g butter (room temperature)
  • 2 tbsp agave syrup (you can use icing sugar too)
  • zest of 1 lemon
  • 0.5 tbsp vanilla extract
  • 100 g dark chocolate
  • 1 tsp coconut oil
Instructions
  1. Prepare the filling

    In a bowl, add the cottage cheese, butter, agave syrup, vanilla and lemon zest. Blend everything with a hand blender (immersion blender - see the method here) until smooth. Transfer the filling into a piping bag and on a baking tray lined with baking sheet, pipe equal bars. Set them in the freezer for AT LEAST 2 hours. Please respect this step, the filling is pretty smooth so if you don't freeze it enough it will not hold its shape.

  2. Finish the bars

    Melt the dark chocolate over bain marie and add the coconut oil to it once melted. Mix well. Take the bars out and carefully dip them in dark chocolate using 2 skewers (dip one end then dip the other end, see my reel). Let them set in the fridge for 10 minutes, then serve.  Enjoy!
