Description

This Korean Cucumber salad has become one of my favourite salads. So simple but with such a complex profile of flavours! It is quick, it requires minimum efort and it is insanely delicious!

Note: I have cut the cucumber like a spiral cause I thought it's more fun to eat it like that, but you can just slice it.

Ingredients
  • 6 Pcs cucumbers (small)
  • 1 tbsp salt
  • 1 tbsp sesame oil
  • 1 tsp chilli powder (or flakes, ideally Korean gochugaru)
  • 1 tsp sesame seeds
  • 2 Pcs spring onion (finely chopped)
  • 1 tsp rice vinegar
Instructions
  1. Making the salad

    Start by slicing the cucumbers. Add the salt to it and let them rest for 10 minutes. Rub the salt thoroughly, as this will ensure removing a lot of water from the cucumbers.

    After 10 minutes, add all the other ingredients listed above (chilli, oil, vinegar, sesame, garlic and spring onion), give it a good mix and enjoy. Additionally you can also add soy sauce and brown sugar, but I prefered my salad sugar free and gluten free. Trust me you'll love it!
