If you want to try one of my chicken recipes, please try this one! I don't know why I took me so long to try making this malai tikka at home. It was so delicious that it has become my favourite way of eating chicken! It is perfect for the ones who do not tolerate spices well as its marinade is very mild and based on yogurt, cream, cashew and lemon and I just added 3 spices. "Malai" means "cream" in hindi and tikka means basically "bits/pieces". The secret ingredient of the marinade which blew my mind by giving the chicken such a great consistency! You really need to try this❤️

Ingredients
  • 600 g chicken breast (cut into cubes)
  • 1 Pcs bunch of coriander (you can add more or less depending on your taste, omit if you don't like coriander)
  • 2 tbsp cashew (processed into a powder)
  • 1 tbsp ginger garlic paste (or finely chopped/grated garlic and finely chopped/grated ginger)
  • 1 tsp green cardamom powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • salt (as per taste)
  • 1 cup yogurt
  • 100 ml cream
  • juice of half a lemon
Instructions
  1. Preparing the marinade

    Start by cutting the chicken in cubes and add them to a bowl.

    For the marinade, just add all the listed ingredients above and mix everything well making sore that every piece of chicken is coated in the marinade. For the cashew powder, I have used mortar and pestle and it gave a very fine powder. The same I did for the ginger garlic paste. For best results, marinate the meat at least 5-6 hours or overnight. The meat becomes much more tender and flavourful this way.

    Put the chicken pieces on some long barbecue skewers and bake them or grill them for 20-25 minutes depending on the oven/grill.

    Serve them with garnish of your choice or simple chutney. Trust me, this is the best chicken you will ever try!
