I discovered this dish when I went to Spain for the first time. It is typical for the Andalusian region. Now, regarding the "pil pil" part I have found 2 explanations: one is that pil pil comes from the bubbling sound that the oil makes when it's hot and the other one is that actually pil pil is a sauce of Basque origin containing garlic, chilli and olive oil.

Ingredients
  • 6 Pcs garlic cloves
  • 4 tbsp olive oil (extra virgin)
  • 450 g shrimps (black tiger, defrosted, I kept the tail for a nicer look)
  • 1 tsp smoked paprika
  • 0.5 tsp chilli flakes
  • fresh parsley (for garnishing)
  • salt (as per taste)
Instructions
  1. Cooking the garlic

    For more detailed instructions, watch the video here. In a pan, add the olive oil and the garlic. On very low heat let it sautee for 3-4 minutes so that the oil will get infused.

  2. Everything comes together

    Add the shrimps and salt and let everything cook for 2 minutes on each side.  Add the chilli flakes and the paprika, mix everything well, then turn off the heat and add the chopped parsley. Serve with crusty bread and pair it with white wine of your choice (goes well with Muscat). Enjoy!
